Spiced Acai Energy Bars

Directions
1) Mix all of the ingredients in a food processor until a sticky dough has formed
2) Spread a sheet of plastic wrap over a cutting board
3) Using your hands, form a 1-inch thick rectangle of dough on the plastic wrap
4) Fully wrap the dough rectangle in plastic wrap and place in freezer for 30 minutes
5) Cut into rectangles. Makes 10 bars.


Ingredients
Acai Powder - 3 tablespoons

Almonds - 3/4 cup
Medjool Dates - 3/4 cup (pitted)
Dried Apricots - 1/4 cup
Raisins - 2 tbsp
Ginger Powder - 1/2 tsp
Cinnamon - 1/2 tsp
Vanilla Extract - 1/4 tsp
Salt - Just a pinch (optional)
